GLUTEN FREE STUFFING RECIPE

I am not sure if they celebrate Thanksgiving here in France, but nevertheless I am reposting a recipe for gluten free stuffing for your celebrations this weekend in Canada. Happy Thanksgiving from Europe.

Here is a basic recipe for some really good, gluten free stuffing.
I used GF PATISSERIE'S Italian flatbread,  you can get it at Big Star in Calgary, Nourish in newfoundland,  Kneaded in Regina and at Beau Monde Bakery in Las Vegas.
Don't use crappy bread, because you get crappy stuffing.
Keep in mind, I don't weigh things, just go with my instincts....

One loaf of Italian flatbread makes about 4 cups (or mugs maybe) of cubes....
1/2 Cup of finely chopped celery
1/4 Cup of even finer chopped onions (who came up with CUP as a measuring tool?)
Some Garlic
Salt, Pepper
3 eggs whisked a bit
Chicken broth ( to moisten it a bit)
Oh. yes, chop some parsley.
You can also add some Craisins, if you feel festive.
Put the stuffing into a well schmeared dish, cover it up and bake for about 25 minutes, the last 5 minutes uncovered for some browning.

KEEP IT SIMPLE

GLAZE THE BASICS

MIX IT ALL UP

I ADDED SOME BACON TO THIS ONE

CRUNCHY CRUST, SOFT INTERIOR

My favorite is chestnut stuffing.
Lucky you, your markets will have
them soon. Have to buy on line
here for American ones. They're
a pain to peel, but so worth the
effort.

Trader Joe's and Whole foods have chestnuts"sous vide", frozen or in a jar. Asian markets, Marukai, Mitsuwa... have them fresh.
