Over the last few weeks I have watched a stand at the Farmers' market, that sells roasted beets. Betteraves Cuit.
They look shriveled up to say the least, burnt almost. Why do people stay in line to buy them?
Save the hassle of cooking them? Less messy?
I think it is the flavor. We finally bought one yesterday, peeled it (less messy), chopped it up, sprinkled some Balsamico and sea salt on it, FLAVOR. Smokey roasted flavor. Rich in Vitamin A and C, full of antioxidants. Maybe I should eat them more often?

I love beets, roasted or steamed. We always have them cold during summer with other "crudités".
I like roasting vegetables during winter. That is the only time of the year I can turn on the oven (in Southern California).
Borscht is a good way to eat beets. And then in salads like the one you made. Add toasted walnut meats. Beets are also good eaten raw, grated like carrots, and dressed with vinegar and oil.
Unlike Nadège, we don't have much weather here in Saint-Aignan that would keep us from turning on the oven!
Monsieur Ken, in Canada that's exactly how we ate the beets. Raw. A bit messy,but very crunchy.
I spent one winter in OC Nadege. It was fresh at times indeed.
