IT'S NOT IMPORTANT HOW BIG IT IS, IT'S WHAT YOU DO WITH IT



This is Victoria's first oven when she started GF PATISSERIE. A 1/4 sheet sized Barbie kitchen oven. Popular with Realtors who at Open Houses like to lure you in with the smell of freshly baked cookies....Bought on EBAY. It arrived broken of course. The door would not stay open when you loaded the sheets.

It held maybe 12 cookies or 4 loaves of bread.  Can you imagine? The advantage was that Victoria could schlepp it in and out of community kitchens she rented, while she had her booth at the Bearspaw Farmers' Market. Cross contamination was Victoria's biggest concern from day one. Not once did she use anyone's equipment, not even a spatula, when baking at those places.

"What if no one buys my bread?", was her Sunday morning question, "Then I eat it.", was my repetitive answer. Of course I never had to.
The rest is history. And yes, Victoria got a slightly larger oven.
